Elderflower cordial

Elderflower cordial

Harvest 20 to 25 Elderflower umbels that are in full bloom.

Other Ingredients:

1kg of raw sugar 

3 unwaxed organic lemons (optional to add extra oranges)

50g of food grade Citric acid (optional)

1.5 to 2 litres of water (preferably distilled)

Muslin cloth

Capped bottles 

Recipe:

●Shake the Elderflower umbels, to ensure all bugs are shook off. You can rinse them if you like. Remove all of the stalk as this can be mildly poisonous.

●Add the water to a pot, stir in the sugar and bring to the boil to ensure the sugar has dissolved.

●Squeeze the juice of 1 lemon into the boiled water and sugar, chop up the rest of the lemons and add to the pot. 

Now add the umbels into the water. Stir all the ingredients together. Simmer for 10 minutes and take off the heat.

Cover with a muslin cloth and leave to infuse for 24 hours, stirring occasionally.

Strain the mix through the muslin cloth it should produce 2 litres approx. 

Add the food grade Citric acid and stir. Bottle the Elderflower cordial and keep in the fridge.

Add a dash to water and enjoy a refreshing drink!
